Ingredients

    250 g all-purpose flour
    9 g baking soda
    3 g salt
    400 g white sugar
    2 eggs
    1 (20 ounce) can crushed pineapple with juice
    200 g white sugar
    115 g butter
    235 ml evaporated milk
    75 g flaked coconut
    5 ml vanilla extract
    60 g chopped pecans


Instruction

   1. Preheat oven to 350 degrees F (175 degrees C).
Grease and flour one 9x13 inch baking pan.
Mix the flour, baking soda, salt and 2 cups sugar; set aside.
   2. Beat the eggs and add them to the flour mixture. Then stir in the crushed pineapple and juice until just blended. Pour batter into the prepared pan.
   3. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into cake comes out clean.
   4. To Make Frosting: In a medium saucepan bring to a boil the 1 cup white sugar, butter, and evaporated milk. Boil for 2 minutes, watching carefully to be sure it doesn't burn. Stir the mixture frequently while cooking. Remove from the heat and stir in the vanilla, coconut and pecans. Beat until it cools to lukewarm then pour over the cooled cake.

This cake is DELICIOUS!

You can use a variation of this recipe and it is fabulous! Add all the listed ingredients together including the coconut and nuts, minus the milk. Bake for 40 minutes until carmelized/browning on top. Cool. Mix 2 cups powdered sugar with one 8oz package of cream cheese and frost.

The cake decorations can be made of gum paste, meringue, or marzipan, and can include sugared fruits such as miniature pears, berries, and champagne grapes.

Fresh flowers can add a beautiful touch to the cake.The flower arrangement should reflect the wedding flowers and other reception appointments.

You can decorate with crystallized edible flowers (and/or fruit), made in advance, or use fresh  flowers. Either way, ask your florist for those that haven't been sprayed with pesticides (or gather some from your yard that are organic). (NOTE: Lily of the Valley and others are toxic. Check this chart for a List of Safe and Edible Flowers).

There are different ways to decorate with flowers

1. Place flowers directly on the cake. To keep them fresh by the time you serve the cake, cut a 3" piece from a drinking straw. Bend one end up and tape it. Then fill the straw 3/4 full with water and stick the flower stem in. Arrange the flowers on the cake.
